Chewy Oat & Brown Sugar Biscuits (vegan friendly)

With the summer upon us, it's my annual mission to find activities to keep the kids busy and happy. When I can't think of anything new, I often turn to baking. This recipe is a modification from another Cooking Light favourite - 'Anzac Biscuits'. It's perfect in a pinch because it uses simple pantry ingredients and comes together quickly.  Although I'm not a vegan, one of my best mates is and I recently made this version when she and her family visited.

Chewy Oat and Brown Sugar Biscuits

Ingredients
  • 150g/1 1/2 cups plain flour/all-purpose flour
  • 80g/1 cup porridge oats/oatmeal 
  • 100g/1/2 cup dark brown sugar
  •  125g/2/3 cup granulated sugar
  • 1/2 teaspoon soda bicarbonate/baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon sea salt
  • 60ml/1/4 cup golden syrup or corn syrup
  • 60ml/1/4 cup sunflower oil or vegetable oil
  • 60ml/1/4 cup water
Directions
  1. Preheat oven to 180C/350F/Gas Mark 3.
  2. Combine dry ingredients (flour - salt) in a large bowl and mix well.
  3. Add golden syrup, oil and half the water to the dry ingredients and stir to combine.  If still very dry, add the remainder of the water.  Only use enough for the mixture to form a sticky dough.
  4. Drop a tablespoon of dough onto a greased baking sheet, spacing each about 2-3 inches apart. They may spread a bit.
  5. Bake in preheated oven for 8-10 minutes.  Allow to set 1 minute.  Transfer biscuits to a cooling rack.
Yields about 3 1/2 dozen.
